Superbowl LVII Broccoli Cheddar Soup

1. Add olive oil or butter to the pan and heat on med-high heat. Add in onion and sauté until translucent, about 3-5 minutes. Then add 1 chopped stock of broccoli and saute for 2-3 minutes. Add broccoli heads and cook for another 3-5 minutes. Make sure you do not brown the broccoli. 2. Next add Bonafide Provisions Vegetable Broth to vegetables. It should be about one box or until the vegetables are covered. Add salt, pepper and garlic to taste and let simmer for 3-5 minutes to infuse flavors. Then add to a blender and blend on med-high until you get desired consistency. 3. Add back to the original pot and bring to a low simmer. Add in cheddar cheese and stir ensuring the cheddar melts throughout. Add heavy cream and season if needed and enjoy!
