Copycat Olive Garden Zuppa Toscana

1. Place bacon in a large pan and cook, stirring frequently over medium heat until crispy. Spoon out the bacon and reserve. Discard all but 1 Tbsp of bacon fat & return pot to medium heat.
2. Add chicken sausage & onion to the pot. Cook, breaking up the sausage until the sausage is browned and the onion is soft (5-8 minutes). Add garlic and celery and cook, stirring occasionally, until the celery is soft (2 min). Stir in the Bonafide Provisions No Salt Added Chicken Broth, basil, oregano, and red pepper flakes. Season with salt and pepper. Increase the heat to high and bring to a boil. Cook until the flavors have melded (5 min). Stir in the kale to wilt. Reduce the heat to medium and add the coconut milk, parmesan, and gnocchi. Simmer until gnocchi is cooked (about 5 min or until they float).
3. Divide the soup among bowls. Before serving top with reserved bacon and additional parmesan.
